With no ingredients, no menu, but with just two pans and limited kitchenware, the team from Holiday Inn Shanghai Pudong Kangqiao, were awarded as Gold Medal Winners in the Black Box competition hosted by IHG East China and Project Hope this month (June 2013).
The Holiday Inn Shanghai Pudong Kangqiao, Great China’s flagship Holiday Inn, knew that the competition would be strong, and that those taking part in the 2nd Evian “Cuisine for Charity” would be difficult to beat, for the Black Box competition is considered the most challenging of culinary competitions - the food content of the boxes is not revealed prior to the competition.
SML All Day Dining Restaurant's western kitchen team, opened the black box to find scallops and one piece of sea bass... being that this was the first time that the junior team had entered the Black Box competition, they were so nervous that they nearly forgot to grab the ingredients!
With these limited ingredients they put together a challenging and very exciting menu and wrote on the whiteboard: Scallop Tartare with Mango Chutney and Sea bass Vierge.
On accepting the award, SML Executive Chief Chef, Sunny Yu said, “We have great respect for the food and offer natural and healthy dishes, and this is exactly what we produce every day in our restaurant. I am delighted to be here, not only for the competition but also for the promotion of the charity".
The Guofeng Restaurant of Holiday Inn Shanghai Pudong Kangqiao led by Chef Leung won the Bronze Medal in the Chinese Clod Dish competition. These awards are the latest in a strong line of accolades that the hotel team has recently received - three months ago the hotel won “Most preferred hotel for business travelers of China” by the 8th China Hotel Starlight Awards.
